Boutiful Basket Challange, Day 3
I think I need to step up my produce consumption this week. I've only made it through the eggplant, tomatoes, 2 limes, a half cantaloupe, 1/3 of the grapes, 1 peach, and half of the mushrooms. My dog Sophie took one of the cantaloups cantaloupe off the table and devoured it while no one was home on Saturday, even the rind!
I was able to use most of this stuff in an eggplant parmesan recipe I tried out. It was pretty good, but the eggplant should have been cooked a little longer because it was rather firm. I created a tomato sauce by cooking the fresh tomatoes with mushrooms, garlic, basil, and some tomatoes I canned a few months ago. I still have one serving leftover that I can take to work tomorrow for my lunch :)
I still have a ton of stuff. I need to start on the bananas and pitted fruit (plums and peaches). I think a smoothie would be great for the morning, maybe I'll freeze some of the bananas. I still want to make quiche (zucchini mushroom perhaps?) and I would love to make some creamy/fruity ice pops, vanilla peach would be the bomb! Sometimes I wish I didn't have to work so I could make yummy food all day!
In order to finish the basket, I think I'll need to not eat out at all for the rest of the week and make all my meals with some produce. I find it difficult to prepare lunches before I go to work, but I'm going to need to put more effort in to finish all this produce by Saturday!
