Earth Balance Experiment
Breakfast is my all time favorite meal. It can be sweet, savory, or both! It may involve a combination of fruits, juices, eggs, waffles, crepes, vegetables, bacon, and there are American breakfasts, French, Mexican, English... the breakfast possibilities are really endless.
My favorite breakfast lately has been eggs over easy with whole grain toast. Buttery fried eggs oozing with that rich, creamy yoke atop buttered toast is something I find simply divine. There is a lot of butter involved in this dish, which I feel a bit guilty about.
So on this beautiful Sunday morning, as I set out to make my favorite breakfast, I realized I have some Earth Balance buttery spread, which has less fat and calories than normal butter. I bought it on a whim yesterday because it looked healthy. I decided to try making fried eggs and toast using this Earth Balance to lighten up the dish a bit.
The result? It was good! I could hardly tell a difference. My eggs and toast were as wonderful as they normally are.
But I started wondering, is this Earth Balance stuff really better for you than butter? I mean, it seems that Earth Balance is way more processed than butter, and I would certainly not think it's more natural than good old butter. John warns me against using "fake food", which is food pretending to be another food.
I did some research, and lots of folks dig Earth Balance for ethical reasons (no animal products in it). But from a natural health point of view, it seems like butter wins. I mean, you can make butter in your own kitchen with cream as the only ingredient.

So in conclusion, I think I'll stick to butter in the future. I'll probably use up the Earth Balance since I don't want it to go to waste, and then I may never buy it again. I'll just have to work off the extra calories!
